Most of us know the experience of sitting down in front of a perfectly cooked steak.
The smell alone is enough to make people hungry before the plate even touches the table. Add a crispy seared crust, a tender center, and juices running across the plate, and it’s easy to understand why steak has become one of the world’s favorite comfort foods. Of course, almost everyone also has a strong opinion about how steak should be cooked.
Some people insist it should be rare.
Others refuse to eat it unless it’s medium or well done.
And celebrity chefs like Gordon Ramsay have become famous for dramatically criticizing steaks that are either overcooked or still too “RAW!” in the middle.
But despite how common steak is, there’s one thing many people still misunderstand every time they cut into a juicy piece of meat.
That red liquid flowing onto the plate?
It’s probably not what you think it is.
For years, countless people have assumed the reddish juice inside a rare steak is blood. It’s a belief repeated so often that many never stop to question it. Some even describe their preferred steak by saying they like it “bloody.” Family members say it. Cooking shows repeat it. Online food videos casually mention it.
But according to meat scientists, the truth is very different.
The red liquid inside steak is actually mostly water mixed with a protein called myoglobin.
Myoglobin is found in muscle tissue and plays an important role in helping animals store and transport oxygen inside their muscles. Unlike blood, which circulates throughout the body, myoglobin stays inside muscle cells. It’s one of the major reasons meat appears red in the first place.
When meat is first cut or exposed to oxygen, myoglobin reacts with the air and turns bright red — the fresh color people expect to see in supermarkets and butcher shops. Without oxygen exposure, beef actually appears more purplish in color.
As the meat ages or cooks, the myoglobin changes again.
High heat causes the protein to darken, which is why well-done steaks lose their pink or red appearance. Rare steaks, however, are cooked at lower temperatures, allowing the myoglobin to maintain much of its red coloring.
That’s why a medium-rare steak can appear to “bleed” when sliced open.
In reality, it’s mostly moisture mixed with red-colored proteins and pigments.
According to meat science experts, actual blood is largely removed from animals during the processing stage long before the meat reaches stores or restaurants. What remains inside the muscle tissue is water, proteins, fats, and compounds like myoglobin.
Jeffrey Savell, a Meat Science professor at Texas A&M University, explained that the amount of myoglobin in meat depends heavily on how active the muscles are.
Animals that use certain muscles more frequently develop higher concentrations of myoglobin in those areas. That’s why darker meats often come from muscles that work harder.
For example, turkey legs are much darker than turkey breast meat because the leg muscles are constantly active while walking and supporting the bird’s body weight. Beef steaks also contain more myoglobin than lighter meats like chicken breast because cows rely heavily on strong muscle groups throughout their lives.
This also explains why older animals often produce darker meat than younger ones.
Another interesting detail many consumers don’t realize is how meat gets its bright red supermarket appearance in the first place.
Fresh beef isn’t naturally bright cherry-red immediately after processing. Instead, it starts with a darker purplish tone. During packaging and display, exposure to oxygen triggers a chemical reaction called oxidation, which transforms the surface into the vivid red color shoppers associate with freshness.
Over time, continued oxidation can eventually turn meat brown.
That change often worries consumers, but experts say brown meat does not automatically mean the product has spoiled.
Savell explained that supermarkets frequently discount brown meat simply because shoppers are less likely to buy it, even though it can still be safe to eat if handled and cooked properly. The key is paying attention to storage conditions, smell, and expiration dates rather than color alone.
The reason rare steak liquid resembles blood so closely comes down to one simple fact: meat contains a lot of water.
Savell noted that meat is approximately 70 percent water. When this moisture mixes with myoglobin and other natural pigments, the result creates a reddish liquid that strongly resembles diluted blood.
“You have water, and myoglobin, and other pigments that leak out,” he explained. “That’s where this juice comes from. I can assure you it’s not blood.”
Recently, this fact resurfaced online after influencer and steak enthusiast CarnivoreJT shared the information with followers on social media platform X.
“Did you know? The red liquid inside of your packaged meat is not blood. It is a mixture of water and myoglobin,” he wrote.
The post quickly attracted attention from users who admitted they had believed otherwise their entire lives.
“Wow. Always thought it was blood!!!” one person responded.
Another commented: “I did not know this. Interesting.”
For many people, learning the truth completely changes the way they view rare steak.
What looks like blood is actually part of the science of muscle tissue, oxygen exposure, and cooking temperatures. And while the appearance may still surprise some diners, understanding the role of myoglobin helps explain why steaks look and taste the way they do.
